Luxe of the Day: Foie Gras


We know some people have moral issues with eating foie gras. We don't. There is probably nothing in this world that is more luscious, more savory, than a bite of perfectly prepared foie gras. iGourmet is offering this raw foie gras prepared in upstate New York, which is recognized by its oval shape and firm texture. They're recommendation on preparation is: "Slice uncooked foie gras lobes while very cold to avoid breakage. Slice at a 45 degree angle against the grain, usually across the lobe. Liberally salt and pepper each slice. When you sauté raw foie gras, use very high heat so that the outside is quickly seared.
